Following a meticulous selection process that singles out the top of the crop, only the absolute best blue agave pinas are slowly roasted in traditional giant clay ovens. They are roasted for up to 36 hours, at a temperatur of 90 degrees Celsius or 194 degrees Fahrenheit until they turn a golden yellow. In a step overlooked by most distilleries, these ovens are cleaned after each batch is cooked to eliminate the bitter residues left behind.
